I woke up this morning to sunshine and a desire to get outside. I grabbed a bag of carrots and a bottle of water for my 8 mi/1945 ft hike. As I started back home from Poo Poo Point, I was looking forward to wrapping my then-frozen fingers around a cup of (whole foods plant based) hot cocoa. Luckily there was some coffee leftover. Voila, mocha!
Lunch: leftover roasted cauliflower, extra-firm tofu and black beans with a generous splash of soy sauce to tie it together.
Hot cashew mocha java: two cups coffee, handful of cashews, handful of dates, healthy dash of cocoa powder (maybe two tsp?). Boil together for a couple of minutes to soften cashews and dates. Let cool slightly then blend until perfectly smooth and frothy. Yum. Cinnamon and/or vanilla or a touch of peppermint would be great, too.
