Heat oven to 425F. Slice mushrooms and broccoli into parchment paper-lined baking sheet, salt. Slice a block of extra firm tofu into 4 thin horizontal slices, press between fabric napkins or towels, add to baking sheet, salt. Bake until starting to brown, flip, bake until everything’s almost as browned as you like it, then toss a couple of pieces of multigrain seeded bread in the oven. Remove and put tofu on toast, sprinkle nutritional yeast and soy sauce to taste, pile vegetables on, more soy sauce & nutritional yeast as needed. And then some hot sauce (Cholula, tapatio, whatever floats your boat). Small kitchen gnome optional.
I used the other two slices of tofu the next day with raw kale, mashed avocado, and more nutritional yeast & soy sauce (makes kind of a cheesy sauce). Too much yum, barely managed photograph.
