Buddha bowl: sauté onions and mushrooms until crispy & brown, remove. Sauté prepped beans (chickpeas & great northern, in this case) and fresh spinach. Add vegetables back to pan, salt, pepper, and add a splash of lemon juice. Put in bowls.
Meanwhile, French fries: slice carrots and sweet potatoes thin, spread on a plate, and microwave in three minute intervals until the texture of mushy fries. Add to your now-empty pan to brown a little bit and add some salt and pepper.
